Cranberry Lemon Bites

The holidays are in full swing and this Cranberry Lemon Holiday Bites recipe are sure to be a crowd pleasure. As part of our Healthy, Happy Holiday series we bring the first of many fun and healthy holiday recipes to share with your loved ones.

Here is a healthy and tasty recipe for Cranberry Lemon Holiday Bites. These are perfect to take to parties or have out at your next gathering. And don’t feel guilty about eating them because they are good for you (shhhhh don’t tell anyone)!

They take all of 20 minutes to make but they do need to refrigerate for about 2 hrs so make sure you plan ahead.


Cranberry Lemon Holiday Bites

Cook Time: 20 minutes

Yield: Approx 20 bites

Cranberry Lemon Holiday Bites


  • 1 cup unsweetened coconut
  • 2/3 cup whole almonds
  • 1/3 cup dried cranberries
  • 1 tablespoon coconut oil - melted
  • 1/4 teaspoon vanilla
  • 2 tablespoons cranberry juice
  • 1 teaspoon 100% pure maple syrup
  • 10 drops lemon essential oil


  • Please unsweetened coconut and almonds in a food processor and chop/blend until coarse.
  • Add dried cranberries, melted coconut oil, vanilla, cranberry juice, maple syrup and lemon essential oil.
  • Blend until mixtures starts to clump together.
  • Form into balls and refrigerate for 2 hrs (over is always better if possible)

Cranberry Lemon Holiday Bites Recipes Tips:

If you don’t like lemon as much as I do you can modify the recipe and use less lemon essential oil. Also, when forming the balls do it carefully, pressing to hard could make them crumble.

These are really something you can make all year round. They are great to keep in the fridge for a quick snack or energy boost during the day.
