Quinoa is high in fiber, protein and is gluten free. Adding quinoa to your diet can reduce the risk of cardiovascular disease, diabetes, colon cancer and obesity. This is a great side dish to offer this Thanksgiving or Christmas holiday for anyone that is watching their diet.

Sweet Potato and Apple Quinoa Recipe

Ingredients

  • 1 package quinoa
  • 2 sweet potatoes
  • 2 honeycrisp apples
  • juice from 1/2 lemon
  • 1 cup chopped hazelnuts
  • 1/4 cup dried cranberries
  • 1/4 chopped onion
  • 1/4 cup 100% pure maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • pinch of thyme
  • pinch of salt

Instructions

  • Peel and cube sweet potatoes, chop onions and slice apples and toss with 1/2 juice of a lemon.
  • Mix together sweet potatoes, onions and apples in a bowl and mix in 100% maple syrup, cinnamon and ginger. Put in roasting pan and roast for 25 minutes.
  • Note: the last 5 minutes of roasting time mix in hazelnuts and dried cranberries.
  • While mixture is roasting cook quinoa according to the directions on the package.
  • Once potatoes and apple mixture is finished combine mixture and quinoa in a bowl.
  • Add a pinch of salt and thyme toss and serve.
